Apples & Cream Cheese Crepes

Cream filling:

  • 1/2 cup cream cheese
  • 1/2 cup mascarpone cheese
  • 1/4 cup sour cream
  • 2 tsp vanilla
  • 2 Tbl sugar

Mix to creamy consistency.

Apple topping:

  • 4 Granny Smith apples cored and cut into 8 wedges
  • 2 cups of brown sugar
  • 1 stick of butter
  • 1/4 cup heavy whipping cream

Over high heat (preferably in a cast iron skillet) combine brown sugar and butter. Allow it to start to bubble. Reduce heat to medium and stir in the cream. Add the apples and cook until "fork tender."
